I was told to check on my queen as less as possible. I went on a one week vacation and when i checked on it it was moldy with a dead queen covered in a peach fungi on her gaster and grey on the rest of her body. I usually check on her once a week. What happened?

Most likely it was that the queen was not fertile. This can happen sometimes. Also, even if it is fertile, it can happen that she sudenly die with no visible cause.
