I know it’s not near hibernation time yet, but I’m wondering if I could put my c.novaeboracensis right into the fridge for hibernation, or if I have to make it colder day by day like outside

Just put them in a colder place, that way they gradually go into it.

So I can just put them in the fridge and just let them slowly get colder over the day

What some people do is rely on their instinct. When they all have full gasters and little brood, hibernate them.
